OBJECTIVE: In this study, 30 samples of pickled white cheeses purchased from different markets in Ulus-Ankara were examined for hygienic quality.
METHODS: In result of the examination, while Staphylococcus aureus, Clostridium perfringens,
Salmonella spp., Listeria monocytogenes and moulds were not isolated from the pickled white cheeses, coliform group bacteria were isolated from 21 samples of pickled white cheeses.
RESULTS: 18 of these samples were found that fecal coliforms and Escherichia coli were ranged between 7.3x101-24x102 cfu/grams.
CONCLUSION: All of cheese samples were found containing yeasts ranged between 1.0x102- 2.7x103 cfu/grams. The microbiological analysis showed that microbiological quality of the pickled white cheese samples were generally poor because of inadequate hygienic conditions during production.
AMAÇ: Bu çalışmada, Ankara İli Ulus Semti’ndeki marketlerden temin edilen 30 adet beyaz peynir örneği mikrobiyolojik yönden incelenmiştir.
YÖNTEMLER: Yapılan inceleme sonucunda peynir örneklerinin hiçbirinde Staphylococcus aureus, Clostridium perfringens, Salmonella spp., Listeria monocytogenes ve küfe rastlanılmazken; 21 peynir örneğinde koliform grup bakteri bulunduğu tespit edilmiştir.
BULGULAR: Ayrıca koliform grup bakteri içeren peynir örneklerinden 18’inde, sayıları 7.3x101-
24x102 kob/gram arasında değişen fekal koliform ve Escherichia coli’ye rastlanmıştır. Peynir örneklerinin tamamında 1.0x102-2.7x103 kob/gram arasında değişen sayılarda maya bulunmuştur.
SONUÇ: Bu çalışmanın sonucunda; beyaz peynir örneklerinin üretimi sırasında hijyenik koşullara yeterince uyulmaması nedeniyle mikrobiyolojik kalitelerinin genel olarak yetersiz olduğu belirlenmiştir.
